Mocha cheesecake
Ingredients/Components
- sugar - 3/4 c
- eggs - 4 item
- granulated sugar - 1/2 Tbsp
- butter - 1/3 c
- 1 oz - 2 sq
- dash of salt - 1 item
- instant coffee - 2 3
- 8 oz - 2 pkg
- chocolate wafers, finely crushed
How to make mocha cheesecake:
Crust:1 1/2 c. chocolate wafers, finely crushed1/3 c. butter1/2 Tbsp. granulated sugar Combine wafer crumbs, butter and sugar. Butter sides and bottom of 8-inch spring-form pan. Press crumb mixture evenly onto bottom of pan. Melt chocolate over hot, but not boiling, water. Stir until smooth. Beat cream cheese until soft and smooth. Add eggs, one at a time to cream cheese. Gradually add sugar, mixing until well blended. Add melted chocolate, instant coffee and salt. Stir. Pour into prepared pan. Bake at 350° in center of oven for 40 minutes or until cake center is set. It will firm when chilled. Let cheesecake cool at room temperature before refrigerating. Chill in refrigerator at least 4 hours before removing from pan.
