Ingredients/Components

- vanilla extract - 1/2 tsp
- butter - 1/2 c
- large eggs - 4 item
- fresh lime juice - 1 Tbsp
- tequila - 1/3 c
- cartons sour cream
- grated lime rind - 1 tsp
- salted pretzel crumbs
- individual size envelopes instant Margarita mix - 2 item
How to make margarita cheesecake:
Filling:2 (8 oz.) pkg. cream cheese1/2 c. sugar2 individual size envelopes instant Margarita mix4 large eggs1/3 c. tequila1 tsp. grated lime rind1/2 tsp. vanilla extract Topping:2 (8 oz.) cartons sour cream1/2 tsp. grated lime rind1 Tbsp. fresh lime juice1/4 c. sugar Combine the first 3 ingredients; firmly press onto bottom and 1 inch up sides of 9-inch spring-form pan. Bake at 375° for 6 to 8 minutes; set aside.Beat the cream cheese at medium speed with mixer until fluffy. Gradually add sugar and Margarita mix; beat well. Add eggs one at a time. Stir in tequila, grated rind and vanilla. Pour filling into crust. Bake at 375° for 25 to 35 minutes or until center is almost set. Remove from oven. Cool on wire rack for 30 minutes.
Combine sour cream and next 3 ingredients; spread topping over top of cake. Bake at 425° for 10 minutes. Remove from oven and cool completely. Cover and chill 8 hours. Garnish with more grated rind. Remove sides of pan and serve.
