Ingredients/Components

  • sugar - 3/4 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • lemon juice - 1 Tbsp
  • vanilla wafers - 24 item
  • each pkg - 2 oz
  • sliced nuts - 1/2 c
  • can peach, blueberry or cherry pie filling - 1 item

How to make miniature cheesecakes:

Line cupcake pans with liners. Place a vanilla wafer in bottom of each liner. In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill the liners 2/3 full with cheese mixture. Bake in preheated 375° oven for 15 or 20 minutes or until set. Top each with spoonful of filling and 1 teaspoon of nuts. Chill. Serves 24.
