Ingredients/Components
- eggs - 2 item
- vanilla - 1 tsp
- granulated sugar - 3/4 c
- lemon juice - 1 Tbsp
- vanilla wafers - 24 item
- cream cheese, softened 8 oz - 2 pkg
- can cherry, peach or blueberry pie filling - 1 item
How to make miniature cheesecakes:
You also need 24 cupcake liners.Line cupcake pans with liners. Place a vanilla wafer in bottom of each liner. In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill the liners 2/3 full with cream cheese mixture. Bake in preheated oven at 375° for 15 to 20 minutes or until set. Top each with spoonful of filling and chill. Makes 24.
