Mini cheesecakes

Ingredients/Components

• sugar - 3/4 c
• eggs - 2 item
• vanilla - 1 tsp
• lemon juice - 1 Tbsp
• vanilla wafers - 1 item
• softened cream cheese

How to make mini cheesecakes:

Filling:16 oz. softened cream cheese3/4 c. sugar2 eggs1 tsp. vanilla1 Tbsp. lemon juice Also need cupcake paper cups.

Cream sugar and cheese together. Add rest of filling ingredients and mix well. Put cupcake paper cups in muffin tins and vanilla wafer in the bottom of each cup. Fill each cup 3/4 full with cheese mixture and bake at 375° for 10 to 15 minutes, or until set. Chill 6 hours and add about 3 cherries to top of each cheesecake before serving. Makes 18.
