  • sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • pkg - 2 oz
  • vanilla wafers - 24 item
  • fruit topping if desired blueberry or Comstock cherry pie filling - 1 item

How to make mini cheesecakes:

You will need 2-inch mini cupcake papers.

Beat together all ingredients except vanilla wafers. Line cupcake tin with papers and place one vanilla wafer in the bottom of each. Fill with cream cheese batter. Bake about 15 minutes at 375°. Top with fruit topping. Chill before serving. Makes 24. Enjoy!
