Ingredients/Components

  • sugar - 1/2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • pkg - 2 oz
  • vanilla wafers - 12 item
  • fruit topping or preserves - 1 item

How to make mini cheesecakes:

Line muffin tins with foil liners. Place 1 vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs and mix well. Pour over wafers, filling 3/4 full. Bake 25 minutes at 325°. Remove from pan when cold. Chill in liners. Top with fruit, preserves, nuts or chocolate.
