Ingredients/Components

  • graham cracker crumbs - 2 c
  • sugar - 1/2 c
  • eggs - 10 item
  • vanilla - 1 tsp
  • pkg - 5 oz
  • sour cream - 1 pt
  • salt - 1/2 tsp
  • cornstarch
  • melted margarine - 3/4 c
  • lemon juice - 3 Tbsp

How to make cheesecake:

Melt margarine and pour into graham cracker crumbs. Add 1/2 cup sugar. Press into the bottom of a 10-inch spring-form pan firmly. Bake 5 minutes at 350°.

Beat cream cheese until fluffy (easiest if cream cheese is softened). Add in eggs, one at a time, beat until mixture is smooth. Add to this the 1 1/2 cups of sugar, cornstarch, salt and lemon juice. Beat this mixture 100 strokes or until well mixed and smooth. Pour the cheese mixture over the graham cracker crumbs and bake at 350° for 1 to 1 1/4 hours or until middle of the cheesecake is firm.

Mix together the remaining sugar, vanilla and sour cream. When the cheesecake is firm, spread this mixture over it and return it to the hot oven for 10 minutes or until it looks "bubbly" on top. Remove from heat and cool slightly prior to refrigerating. Do not remove sides of spring-form for at least 8 hours after you refrigerate this cheesecake. Best if made the day before serving. Top with your choice of fresh fruit.
