Ingredients/Components

  • salt - 2 Tbsp
  • water - 4 qt
  • garlic powder - 1/4 tsp
  • pepper - 1/2 tsp
  • can tomato sauce - 1 oz
  • basil - 2 tsp
  • parsley - 1/4 c
  • carrots, sliced - 2 c
  • bay leaves - 2 item
  • celery, sliced - 2 c
  • meat - 3 lb
  • medium onions, quartered - 2 item
  • soup bones - 2 lb
  • can tomatoes in puree or juice - 1 oz
  • can red or white kidney beans, undrained - 1 to
  • macaroni shells or elbows

How to make minestrone soup:

Place bones and meat in large pot, add water. Bring to boil, skim surface of liquid if desired. Add tomatoes, tomato sauce, onions, parsley, salt, basil, pepper, garlic powder and bay leaves. Bring to boil, reduce heat and simmer for 1 1/2 hours. Add carrots and celery, cover and simmer 1/2 hour longer or until meat is tender. Remove bones and meat, cut meat into bite size pieces and return meat to soup. Add kidney beans and macaroni. Simmer, covered, 15 to 20 minutes. Serve with cheese on top.

I remove amount of soup I need and then add the macaroni, only a handful, otherwise the macaroni swell and take over the soup.

Makes 1 gallon.
