Microwave peanut brittle
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- butter or margarine - 1 tsp
- salt - 1/8 tsp
- baking soda - 1 tsp
- chopped walnuts - 1 c
- light corn syrup - 1/2 c
- honey - 1/4 c
- ground cloves - 1/2 tsp
- ground cinnamon - 1/2 tsp
- ground nutmeg - 1/4 tsp
- vanilla ice cream optional - 1 item
- raw shelled peanuts skins on
- raisins or currants - 1/2 c
- softened unsalted butter, divided - 5 Tbsp
- medium to large Golden Delicious apples - 6 item
How to make microwave peanut brittle:
Preheat oven to 350°. Butter an 8-inch square baking dish. In a mixing bowl, beat 4 tablespoons of the butter with the sugar and honey. Add the nuts, raisins and spices. Mix well. Remove the apple cores, but do not cut all the way through the bottoms. Stuff each apple with nut mixture and place in the baking dish. Rub the skin of each apple with the remaining 1 tablespoon of butter and sprinkle any remaining nut mixture over top. Bake until the apples are soft, 30 to 40 minutes.
