Mexican lasagna
Ingredients/Components
- egg - 1 item
- low-fat cottage cheese - 2 c
- can tomato sauce - 1 oz
- Cheddar cheese - 1 c
- can refried beans - 1 oz
- can vegeburger - 1 item
- to 10 soft corn tortillas - 8 item
How to make mexican lasagna:
Cover bottom and sides of a 9 x 13 x 2-inch baking dish with tortillas. Mix vegeburger, beans and tomato sauce together. Spread vegeburger mixture over tortillas. Place another layer of tortillas over vegeburger mixture. Mix up cottage cheese, Cheddar cheese and egg. Spread over tortillas. Bake at 350° for 30 minutes. Sprinkle rows of cheese, tomato, lettuce, green onions and olives diagonally across the center of casserole.Recipe categories: Main dish, Casseroles, Lasagna.
