Ingredients/Components

  • sour cream - 1 c
  • butter - 1/4 lb
  • chopped green pepper - 1 item
  • onion, chopped - 1 item
  • green onions, chopped - 3 item
  • cooked rice - 2 c
  • Monterey Jack cheese, grated - 1/2 lb
  • Mozzarella cheese, grated - 1/2 lb
  • can green chili peppers - 1 item
  • Pablano peppers - 2 item

How to make mexican green rice:

Saute all vegetables in butter. Place in blender and mush. Add sour cream. Layer rice mush and cheese. Repeat layers, ending with cheese. Bake, uncovered, at 350° until cheese melts and is hot through.

May be made ahead and refrigerated before cooking. Take out of refrigerator at least 2 hours before cooking.
