Mexican fiesta dip
Ingredients/Components
- salt - 1/2 tsp
- lemon juice - 2 Tbsp
- pepper - 1/4 tsp
- mayonnaise - 1 c
- green pepper - 1 item
- taco seasoning mix - 1 pkg
- shredded Monterey Jack cheese - 1 c
- ripe avocados - 2 item
- can refried beans - 1 oz
- can bean dip with jalapenos - 1 item
- ripe tomatoes, peeled, chopped and drained - 3 item
- bunch green onions scallions - 1 item
- can black ripe seedless olives - 1 item
- shredded sharp yellow Cheddar cheese - 1 c
How to make mexican fiesta dip:
Use a 12-inch round platter.1st Layer: Mix refried beans and bean dip and spread over entire platter.
2nd Layer: Peel, pare and mash avocado. Add lemon juice, salt and pepper. Mix well. Spread over first layer.
3rd Layer: Mix sour cream, mayonnaise and taco seasoning. Spread over second layer.
4th Layer: Peel tomatoes; seed, chop and drain. Spread over third layer.
5th Layer: Chop green onions, pepper and ripe olives. Mix well and use 3/4 of the mixture and spread over the fourth layer (reserving 1/4 of the mixture for decorating the top).
6th Layer: Top with grated cheese, which has been mixed.
7th Layer: Decorate with the 1/4 reserved mix from Layer 5.
Best made 1 day in advance and covered with plastic film in refrigerator. Serve with corn chips for dipping.
