  • salt
  • buttermilk - 1 c
  • baking powder - 3 tsp
  • cooking oil - 1/3 c
  • eggs, slightly beaten - 2 item
  • sharp Cheddar cheese, grated - 1/2 lb
  • corn meal - 1 c
  • small can hot chili peppers - 1 item
  • 2 can cream-style corn

How to make mexican cornbread:

Mix slightly beaten eggs, corn, cooking oil and buttermilk. Sift together corn meal, salt and baking powder. Add to egg mixture. Pour half the batter into greased baking dish. Put layer of cut up hot chilies, then layer of cheese over batter. Add remaining batter. Cheese may be sprinkled over top. Bake 25 minutes in 450° oven. Yields 10 to 12 servings.
