Ingredients/Components

  • milk - 1 c
  • flour - 1/2 c
  • soda - 1/2 tsp
  • vegetable oil - 1/2 c
  • eggs, well beaten - 2 item
  • large onions, chopped - 2 item
  • sharp Cheddar cheese, grated - 1/2 lb
  • can creamed corn - 1 item
  • corn meal - 1 c
  • hamburger, browned - 1 lb
  • hot peppers, chopped - 2 item

How to make mexican corn bread:

Caution: Skillet must be greased and hot before adding cornmeal mixture. Brown hamburger; drain off fat. Grate cheese; set aside. Combine onions, hot peppers; set aside. Place a 9-inch iron skillet, greased well, in a hot oven. Mix all dry ingredients, add eggs, oil, milk and corn. Remove hot skillet from oven. Put 1/2 of corn meal mixture in skillet. Spread cheese over mixture. Then sprinkle hamburger over cheese. Sprinkle onions and pepper over hamburger. Cover with rest of corn meal mixture. Bake in a 350° oven for 1 hour 15 minutes.
