Mexican corn bread
Ingredients/Components
- milk - 1 c
- salt - 1/2 tsp
- eggs, beaten - 3 item
- ground beef - 1 lb
- shredded Cheddar cheese - 1/2 lb
- salt to taste - 1 item
- can cream-style corn - 1 oz
- corn meal - 1 c
- small onion, grated - 1 item
- jalapeno peppers, chopped optional - 4 item
How to make mexican corn bread:
Season beef with salt and saut in heavy skillet. Drain; set aside. Combine cheese, corn meal, salt, onion and peppers in large bowl; mix well. Stir eggs into milk. Add to dry ingredients and stir just to moisten. Spoon half of batter into greased 2-quart casserole. Place beef over batter and top with remaining batter. Bake at 350° for 45 minutes or until done.
