Mexican corn bread
Ingredients/Components
- meal - 1 c
- eggs, beaten - 2 item
- sweet milk - 1 c
- soda - 1/2 tsp
- salt - 3/4 tsp
- can cream-style corn - 1 item
- bacon drippings - 1/2 c
- ground beef - 1 lb
- chopped onion - 1 item
- grated cheese - 1/2 lb
- jalapeno peppers - 4 item
How to make mexican corn bread:
Mix meal, eggs, milk, soda, salt, corn and bacon drippings. Set aside. Brown beef and pour 1/2 of first batch mixture into greased pan. Sprinkle with cheese, ground beef, onions and peppers. Pour the remaining ingredients over mixture. Then pour batter on top of that. Bake 45 to 50 minutes at 350°. Brown well.Recipe categories: < 4 hours, Breads, Mexican.
