Mexican corn bread
Ingredients/Components
- eggs - 2 item
- salt - 1 tsp
- baking powder - 3 tsp
- yellow corn meal
- Wesson oil - 2/3 c
- can creamed corn - 1 item
- grated sharp cheese - 1 c
- chopped jalapeno peppers - 3 item
- sour milk or buttermilk - 1 c
How to make mexican corn bread:
Mix all ingredients except cheese. Pour half of batter into greased 9-inch square baking dish. Sprinkle half of cheese over batter. Pour in rest of batter and sprinkle with remaining cheese. Bake for 45 minutes at 425°.Note: Good served with chili or other Mexican dishes.
