Ingredients/Components

  • salt - 3 tsp
  • flour - 1 Tbsp
  • soda - 1/2 tsp
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • salad oil - 1/2 c
  • grated Cheddar cheese
  • green pepper, chopped - 1/2 item
  • corn meal
  • small can creamed corn - 1 item
  • to 5 green onions, chopped - 4 item
  • to 6 chopped jalapeno peppers - 3 item

How to make mexican corn bread:

Mix cornmeal, flour, salt and soda. Add buttermilk, eggs, oil and corn. Beat and mix well. Stir in peppers and green onions.

Grease 9 x 14-inch pan. Pour in half the batter and sprinkle with half the cheese, then repeat. Bake at 375° for 35 minutes.
