Mexican chicken and rice
Ingredients/Components
- pkg - 1 oz
- oil - 1 Tbsp
- chicken broth - 1 c
- shredded Cheddar cheese - 1/2 c
- small onion, chopped - 1 item
- Minute rice
- mild salsa - 1 c
- small green pepper, chopped - 1 item
- boneless, skinless chicken breast, cubed - 1 lb
How to make mexican chicken and rice:
Heat oil in large skillet on medium high heat. Add chicken, onions and peppers. Cook and stir until cheese is cooked through. Add corn and salsa, bring to a boil. You may add a little water, if needed. Stir in rice; cover. Remove from heat, let stand 5 minutes. Fluff with fork. Sprinkle with cheese; cover.
