Ingredients/Components

  • pkg - 1 oz
  • oil - 1 Tbsp
  • chicken broth - 1 c
  • shredded Cheddar cheese - 1/2 c
  • small onion, chopped - 1 item
  • Minute rice
  • mild salsa - 1 c
  • small green pepper, chopped - 1 item
  • boneless, skinless chicken breast, cubed - 1 lb

How to make mexican chicken and rice:

Heat oil in large skillet on medium high heat. Add chicken, onions and peppers. Cook and stir until cheese is cooked through. Add corn and salsa, bring to a boil. You may add a little water, if needed. Stir in rice; cover. Remove from heat, let stand 5 minutes. Fluff with fork. Sprinkle with cheese; cover. Let stand 2 minutes or until cheese melts.
