Mexican casserole
Ingredients/Components
- ground beef - 2 lb
- can tomato paste - 1 oz
- onion, chopped - 1 c
- shredded cheddar cheese - 1 c
- hot sauce to taste - 1 item
- boxes Jiffy corn muffin mix - 2 item
- can stewed chili style tomatoes - 2 oz
- cans mexicali corn, drained - 2 item
How to make mexican casserole:
Brown ground beef. Drain.In a 9 x 13 inch glass dish, stir together ground beef, tomatoes, tomato paste, corn, onion, and hot sauce. Prepare Jiffy mix as directed. Spread over the meat mixture. Bake at 375° for 25 - 30 minutes.
Sprinkle shredded cheddar cheese over top of corn bread at the last 5 minutes of the cooking time.
