Ingredients/Components

  • cup chopped onion - 1/4 item
  • cup chopped green pepper - 1/2 item
  • cup water - 1/2 item
  • Pork Chops - 4 item
  • cup long grain rice - 1/2 item
  • 16oz can tomatoes, cut up - 1 item
  • 8oz can whole kernel corn, drained - 1 item
  • 8oz can red kidney beans, drained - 1 item
  • 4oz can of green chilies - 1 item

How to make mexicali pork chops:

A few dashes of hot pepper sauce can be added, if you like it a little spicer.

Trim excess fat from chops, cook fat trimmings for grease, brown chops both sides. Season with salt and pepper, set aside, reserve drippings, cook green peppers and onion till tender, but not brown. Stir in tomatoes, drained beans, uncooked rice, water, chilies, hot pepper sauce and 1/4 tsp. salt. Bring to a boil, place mixture into a 12x7 1/2-inch baking dish. Arrange chops on top of mixture and bake at 350° for 35-45 minutes covered, then 15 minutes uncovered.
