Taco lasagna
Ingredients/Components
- ground beef - 1 lb
- cup chopped onion - 1/2 item
- cup chopped green pepper - 1/2 item
- cup water - 2/3 item
- envelope taco seasoning - 1 item
- 15 oz can black beans, rinsed and drained - 1 item
- 14 1/2 oz can Mexican diced tomatoes, undrained - 1 item
- flour tortillas 8 inches - 6 item
- 16 oz can refried beans - 1 item
- cups shredded Mexican cheese blend - 3 item
How to make taco lasagna:
In a large skillet, cook the beef, green pepper and onion over medium heat until meat in no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in black beans and tomatoes. Simmer, uncovered, for 10 minutes.Place two tortillas in a greased 13 x 9 x 2 inch baking dish. Spread with half of refried beans and beef mixture; sprinkle with 1 cup of cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake at 350 degrees for 25-30 minutes or until heated through and cheese is melted. Serves 9.
