Ingredients/Components
- onion, chopped - 1 item
- oregano to taste - 1 item
- tripe, cut in pieces use honeycomb tripe - 5 lb
- small can Las Palmas chili sauce - 1 item
- can solid pack tomatoes large - 1 item
- pigs feet, cut in pieces - 2 item
- hominy small can, optional - 1 item
- small bell pepper, diced optional - 1 item
How to make menudo:
Put tripe in a large pan and cover with plenty of water. Bring to a boil and simmer until most of the fat comes to the top. Drain and rinse. Return to the pot and add onion, chili sauce, tomatoes and a few pinches of oregano. You may also add the pigs feet at this time. Cook until tender. Just before the pigs feet are done, add hominy and bell pepper, if you wish. Serve with tortillas, chili beans and tossed salad.Menudo is usually cooked during the holiday season. Great hangover cure (so they say).
