Ingredients/Components

  • eggs - 2 item
  • salt - 1/2 tsp
  • vegetable oil - 3 Tbsp
  • pepper - 1/8 tsp
  • chopped onion - 1/4 c
  • chopped parsley - 1 item
  • evaporated or whole milk - 1 c
  • grated Swiss or Cheddar cheese - 1 c
  • shredded frozen hash browns - 3 c
  • diced ham, sausage or chopped chicken - 3/4 c

How to make meat and potato pie:

Mix together vegetable oil and potatoes in 9-inch pie plate. Press into pie crust shape. Bake at 425° for 15 minutes or until crust begins to brown. Remove from oven.

Layer on cheese, meat and onions; set aside. Combine milk, eggs and seasoning in bowl and beat all until blended. Pour egg mixture over layered ingredients. Sprinkle with parsley. Return to oven (same temperature) and bake for 30 minutes or until lightly browned. Cool for 5 minutes. Cut into wedges. Makes 4 to 6 servings.
