Marinated brussels sprouts
Ingredients/Components
- salt - 1 item
- water - 1 item
- lemon juice - 1/4 c
- chopped parsley - 1 Tbsp
- lettuce optional - 1 item
- Brussels sprouts 2 c - 1 pt
- thinly sliced celery 1 large rib - 1/2 c
- can sliced tomatoes, well drained* - 1 1/2
- Lemon-Herb Dressing recipe follows - 1 item
- Place in shallow bowl with celery and tomatoes
- each: salt, basil and thyme - 1/2 tsp
How to make marinated brussels sprouts:
Cook sprouts in 2-inches boiling, salted water for 4 to 6 minutes or until just tender; drain. Place in shallow bowl with celery and tomatoes. Pour on dressing; cover and chill at least 2 hours. Drain before serving. Spoon into lettuce-lined bowl. Makes 4 servings.*Two medium size ripe tomatoes (sliced) can be substituted.Lemon-Herb Dressing:1/2 c. oil1/4 c. lemon juice1 Tbsp. chopped parsley1/2 tsp. each: salt, basil and thyme Mix well. Makes about 3/4 cup.
