Ingredients/Components
- salt - 3/4 tsp
- water - 1/4 c
- lemon juice - 1/4 c
- pepper - 1/2 tsp
- olive oil - 1/2 c
- chopped parsley - 1/3 c
- minced garlic - 1 tsp
- diced red bell pepper - 1/4 c
- fresh mushrooms, cleaned - 2 lb
How to make pickled mushrooms:
Place mushrooms in pretty glass bowl; set aside. Mix oil, juice, water, garlic, salt and pepper in saucepan; bring to a boil. Pour over mushrooms. Cover and refrigerate for at least 2 hours. Add parsley and red pepper, stirring to blend. Yields 10 appetizer servings.Recipe categories: Appetizers, < 30 mins, Canning.
