- pkg - 1 oz
- salt - 3/4 tsp
- flour - 2 c
- water - 3 c
- Parmesan cheese - 4 oz
- chopped parsley - 3 Tbsp
- Ricotta cheese - 8 oz
- spaghetti sauce - 1 item
- Mozzarella cheese, cubed - 4 oz
- Filling:2 eggs, beaten
How to make manicotti:
Filling:2 eggs, beaten1 (10 oz.) pkg. frozen spinach8 oz. Ricotta cheese4 oz. Parmesan cheese4 oz. Mozzarella cheese, cubed3 Tbsp. chopped parsley spaghetti sauce Pasta: Beat eggs well with mixer. Add flour and salt. Add water to make smooth batter. Heat pan and brush with oil. Add enough batter to cover bottom of pan. Cook 1 side until set, not browned (about 1 minute). Stack on plate and cover with damp cloth until ready to fill. Pasta may be frozen until ready to use.Filling: Combine eggs, spinach, cheeses, parsley, salt and pepper. Roll up and place each crepe on flat surface, cook side down. Put 2 tablespoons of filling in pasta and roll up. Arrange, side by side, in 9 x 13-inch dish. Pour sauce over manicotti. Bake at 350° for 20 to 25 minutes.
