  • salt
  • butter - 4 Tbsp
  • melted butter - 1 Tbsp
  • pepper - 1/4 tsp
  • packaged bread crumbs - 1/4 c
  • medium potatoes, peeled 9 - 3 lb

How to make make ahead mashed potatoes:

Cook potatoes in boiling water until tender; drain. Combine potatoes, sour cream, butter, salt and pepper in a large bowl. Beat on low until light and fluffy. Pile lightly into a buttered 2-quart casserole. Cover and refrigerate overnight. Bake covered at 325° for 1 hour. Toss bread crumbs in 1 tablespoon butter. Sprinkle over potatoes. Continue baking uncovered for 30 minutes more.
