Low-fat scalloped potatoes
Ingredients/Components
- salt - 1/4 tsp
- cornstarch - 2 tsp
- pepper - 1/4 tsp
- skim milk - 1 c
- grated Parmesan cheese - 2 Tbsp
- chopped onion - 1/2 c
- large potatoes - 2 item
How to make low-fat scalloped potatoes:
Note: Need nonstick spray coating.For sauce, in a small pot, stir together the milk, cornstarch, salt and pepper. Cook and stir over medium heat until thickened and bubbly. Remove from heat and set aside. Spray the sides of a 1 1/2-quart casserole with nonstick spray coating. Peel the potatoes and slice very thin. Layer half of the potatoes and half of the onion into the casserole. Repeat with the rest of the potatoes and onion. Pour sauce over this. Sprinkle with Parmesan cheese. Bake, covered, at 350° for 40 minutes. Uncover and bake for 15 minutes. Serves 4.
