Potato corn chowder
Ingredients/Components
- chopped green pepper - 3/4 c
- chopped onion - 1/3 c
- fat-free chicken broth
- finely chopped potatoes
- salt - 1 tsp
- pepper - 1/4 tsp
- cornstarch - 1/4 c
- skim milk
- frozen whole kernel corn
- jar pimiento pepper - 1 oz
How to make potato corn chowder:
Cook green pepper and onion in saucepan coated with vegetable cooking spray over medium heat, stirring constantly, 5 minutes or until tender. Stir in chicken broth, potatoes, salt and pepper. Bring to boil and simmer 5 to 7 minutes until potatoes are tender.Combine cornstarch and milk, stirring until smooth. Gradually add to potato mixture; stir constantly. Stir in corn and pimiento. Bring to boil over medium heat, stirring constantly. Cook 1 minute or until thickened. Serve immediately. Makes 6 cups.
