- skim milk - 1 c
- salt and pepper - 1 item
- medium onions - 2 item
- butter flavored cooking spray - 1 item
- to 6 medium size potatoes - 4 item
- nonfat Cheddar cheese slices - 1 item
- cans 99% fat-free cream of mushroom soup - 2 item
How to make low-fat scalloped potatoes:
Wash and slice potatoes thinly; do not peel. Slice onions thinly. Spray 2-quart casserole with cooking spray. Layer potatoes (sprayed with cooking spray), onions, cheese and undiluted soup. Repeat layers, adding salt and pepper to taste. After layers are in dish, mix remaining soup with milk and pour over mixture. Top with more cheese.
