Lobster bisque
Ingredients/Components
- milk - 2 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- butter - 3 Tbsp
- light cream - 1 c
- paprika - 1/2 tsp
- sprigs parsley - 2 item
- white pepper - 1/8 tsp
- small bay leaf - 1 item
- stalk celery, sliced - 1 item
- slice onion - 1 item
- can lobster or meat from small boiled lobster or quick frozen lobster tails - 1 oz
How to make lobster bisque:
Scald milk and cream with onion, celery, parsley and bay leaf. Strain. Melt butter in 1 1/2-quart saucepan. Stir in flour, gradually, until smooth. Add scalded milk, slowly, stirring. Add salt, paprika, pepper and flaked, drained lobster meat. Stir and cook over low heat until thickened. Makes 4 servings.Recipe categories: Soups & stews, Bisques/cream soups, Lobster.
