- graham cracker crumbs
- sugar - 2 Tbsp
- eggs - 3 item
- vanilla - 1 tsp

- sour cream
- melted butter - 1/4 c
- Key lime juice - 1/4 c
- grated lime rind - 1 Tbsp
- grated lime - 1 tsp
How to make lime cheesecake:
Cheese Filling:3 (8 oz.) pkg. cream cheese3/4 c. sugar1 Tbsp. grated lime rind3 eggs1/4 c. Key lime juice1 tsp. vanilla Topping:2 c. sour cream3 Tbsp. sugar Combine crust ingredients. Press on bottom and sides of 9-inch spring-form pan. Bake at 350° for 5 minutes. Cool.Beat cream cheese on high speed until fluffy. Gradually add sugar. Add eggs, beating well after each. Stir in rind, juice and vanilla. Pour mixture in pan. Bake at 375° for 45 minutes or until set.
Combine sour cream and sugar; spread over cheesecake. Bake at 500° for 5 minutes. Let cool at room temperature. Chill 8 hours.
To serve, carefully remove side of spring-form pan. Garnish with lime slices.
