Ingredients/Components

  • bay leaf - 1 item
  • salt and pepper to taste - 1 item
  • olive oil - 4 Tbsp
  • medium onion, chopped - 1 item
  • dried currants - 1/2 c
  • large shallot, chopped - 1 item
  • cans College Inn chicken broth - 2 1/2
  • medium yams or sweet potatoes, peeled and cut into chunks - 3 item
  • red lentils, washed

How to make lentil stew:

Preheat olive oil. Add onion, shallot and currants. Cook until onions appear glassy. Add yams, bay leaf, lentils and chicken broth. Simmer for 35 to 45 minutes. Add salt and pepper to taste. May be made a day ahead and reheated. Serves 8.
