Lemon sponge pie
Ingredients/Components
- sugar - 1 c
- milk - 1 c
- flour - 2 Tbsp
- butter - 1/4 c
- pinch of salt - 1 item
- large eggs, separated - 2 item
- juice and grated rind of 2 lemons
- partially baked pie crust - 1 item
How to make lemon sponge pie:
Preheat oven to 425°. Cream sugar and butter until fluffy. Beat egg yolks briskly and add to creamed mixture. Add flour, salt and milk. Whisk in lemon juice and rind.In a separate bowl, beat egg whites until stiff. Fold whites gently into lemon mixture. Pour lemon filling into prepared pie crust. Bake at 425° for 10 minutes. Reduce heat to 325° and bake 30 minutes more or until pie filling is set and crust is browned.
