Lemon pound cake
Ingredients/Components
- butter, softened
- sugar - 2 c
- eggs - 6 item
- salt - 1/2 tsp
- flour - 3 c
- buttermilk - 1/3 c
- baking powder - 1 tsp
- lemon juice
- lemon extract - 2 tsp
- lemon rind or peel - 1 Tbsp
How to make lemon pound cake:
Glaze:1/4 c. lemon juice1/4 c. sugar Heat oven at 350°. Grease and flour a tube or Bundt pan. In a large bowl mix together flour, sugar, salt and baking powder. Add butter, buttermilk and 3 eggs. Beat on low until just moistened. Increase speed to high and beat for 2 minutes. Add lemon extract and lemon rind or peel, blend at medium speed. Add remaining 3 eggs, one at a time, beating at high speed for 30 seconds after each addition. Pour batter into prepared pan. Bake 50 to 60 minutes or until a toothpick comes out clean. While pound cake is cooking, prepare lemon glaze.In saucepan heat lemon juice and sugar over low heat. Stir constantly until sugar dissolves. When cake is done remove from oven, leave cake in pan. With a toothpick, poke holes in cake, pour half of the glaze over it. Cool in pan 15 minutes, then invert on cooling rack. Brush top of pound cake with remaining glaze. Cool. Dust with confectioners sugar.
