Lemon poppy seed cake
Ingredients/Components
- butter, softened - 1 c
- sugar - 2 c
- eggs - 4 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3 c
- buttermilk - 1 c
- baking powder - 1/2 tsp
- baking soda - 1/2 tsp
- powdered sugar
- lemon juice - 1 2
- poppy seed - 1/2 c
- grated lemon peel - 4 tsp
How to make lemon poppy seed cake:
Glaze:1 c. powdered sugar1 to 2 Tbsp. lemon juice Heat oven to 325°. In large bowl, combine all cake ingredients. Beat at low speed, scraping bowl often, until all ingredients are moistened. Beat at high speed, scraping bowl often until smooth (1 to 2 minutes). Pour into greased and floured 12 cup Bundt pan or 10-inch tube pan. Bake 55 to 65 minutes until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. In small bowl, stir together powdered sugar and lemon juice until smooth.
