Ingredients/Components
- sugar
- salt - 1/2 tsp
- flour - 4 Tbsp
- butter - 2 Tbsp
- cornstarch - 4 Tbsp
- eggs, separated - 4 item
- water - 2 c
- lemon juice - 6 Tbsp
- grated lemon rind - 1 Tbsp
- lemon extract - 1/4 tsp
- baked pie shell - 1 item
How to make lemon pie:
Mix sugar, cornstarch, flour and salt in medium bowl, reserving 1/2 cup sugar. Heat water to boiling in medium size pan. Lower heat. Add sugar mixture, stirring constantly for 5 to 7 minutes. Remove from heat. Beat egg yolks slightly in small bowl. Stir in 1/2 cup of sugar mixture. Stir back into mixture in pan and cook for 3 minutes. Remove and cool. Stir in lemon rind, juice and butter. Beat egg whites and lemon extract. Add reserved sugar, one tablespoon at a time until it stands in peaks. Put filling in crust. Put egg white mixture on top. Bake at 350° for 12 minutes.
