Ingredients/Components

  • sugar
  • salt - 1/4 tsp
  • butter
  • cornstarch
  • eggs, separated - 5 item
  • water - 3 c
  • lemon juice - 2/3 c
  • Beat the egg yolks until creamy and add a small amount of hot mixture to the egg yolks and then add all of the hot mixture to prevent curdling

How to make lemon pie:

Cook the water, sugar, cornstarch and butter in a double boiler until thick. Beat the egg yolks until creamy and add a small amount of hot mixture to the egg yolks and then add all of the hot mixture to prevent curdling. Cook this a few minutes and then add the lemon juice. Pour into a baked pie crust.Meringue:3 egg whites6 Tbsp. sugar1/4 tsp. salt1 Tbsp. cornstarch1/2 c. water Heat the water and cornstarch mixture and cook until clear. Cool. Beat the egg whites and gradually add the sugar. Add cooked mixture and beat until stiff. Bake at 350° for 15 to 20 minutes.
