Lemon meringue pie
Ingredients/Components
- sugar - 1 c
- eggs - 4 item
- salt - 1/4 tsp
- butter - 2 Tbsp
- cornstarch - 5 Tbsp
- boiling water
- lemon extract - 1/4 tsp
- fresh lemon juice - 4 Tbsp
- fresh grated lemon rind - 1 tsp
- Mix in juice, then egg yolks
How to make lemon meringue pie:
Blend cornstarch and sugar. Mix in juice, then egg yolks. Pour into boiling water. Stir well and cook over low heat until thick, about 5 to 10 minutes. After mixture thickens, stir in butter and rind. Remove from heat and cool.Meringue:4 egg whites8 Tbsp. sugar1/4 tsp. salt1/4 tsp. lemon extract Beat egg whites, then add sugar, salt and extract slowly. When well beaten, remove 1 cup meringue and fold into cooked mixture. Pour filling into baked pie shell and top with remaining meringue.
