Lemon meringue pie
Ingredients/Components
- sugar - 1 c
- butter or margarine - 1 Tbsp
- salt - 1/4 tsp
- flour - 1/4 c
- cornstarch - 2 Tbsp
- water
- egg yolks - 2 item
- lemon juice - 1/4 c
- 9-inch pie crust - 1 item
- grated rind of 1 lemon
- Meringue:2 egg whites
How to make lemon meringue pie:
Meringue:2 egg whites4 Tbsp. sugar Bake pie crust. Blend together 1 cup sugar, salt, flour and cornstarch; stir in water. Cook over low heat, stirring constantly, until mixture thickens. Stir a little of this hot mixture into beaten egg yolks. Combine mixes and cook a minute longer, stirring constantly. Add lemon juice, rind and butter. Pour into baked pie crust. Cool. Top with meringue made by beating egg whites, adding sugar gradually and beating to a stiff foam. Spread over filling with meringue touching pastry rim at all points.
