  • sugar - 1 c
  • butter or margarine - 1 Tbsp
  • salt - 1/4 tsp
  • flour - 1/4 c
  • cornstarch - 2 Tbsp
  • water
  • egg yolks - 2 item
  • lemon juice - 1/4 c
  • 9-inch pie crust - 1 item
  • grated rind of 1 lemon
  • Meringue:2 egg whites

How to make lemon meringue pie:

Meringue:2 egg whites4 Tbsp. sugar Bake pie crust. Blend together 1 cup sugar, salt, flour and cornstarch; stir in water. Cook over low heat, stirring constantly, until mixture thickens. Stir a little of this hot mixture into beaten egg yolks. Combine mixes and cook a minute longer, stirring constantly. Add lemon juice, rind and butter. Pour into baked pie crust. Cool. Top with meringue made by beating egg whites, adding sugar gradually and beating to a stiff foam. Spread over filling with meringue touching pastry rim at all points. Brown in slow oven at 325° for 15 to 20 minutes or until brown.
