  • sugar - 3/4 c
  • eggs - 3 item
  • flour - 2 Tbsp
  • nutmeg - 1/4 tsp
  • melted butter - 2 Tbsp
  • whipping cream - 1 c
  • lemon juice - 1 Tbsp
  • sugar for topping - 2 Tbsp
  • rhubarb - 1 1/2
  • 10-inch unbaked pie shell - 1 item

How to make rhubarb pie:

Wash and trim rhubarb into 1/4 inch slices. Sprinkle with 3/4 cup sugar, flour and lemon juice. Toss lightly to mix. Spoon into unbaked shell. Bake in 400° oven for 20 minutes. While baking beat eggs slightly, stir in cream, butter and nutmeg until blended. Pour over hot rhubarb in pie shell. Bake for 10 minutes. Sprinkle with sugar for topping over pie. Bake 10 minutes more or until top is golden. Let cool completely.
