Lemon curd
Ingredients/Components
- sugar
- butter - 1/2 c
- eggs, beaten - 4 item
- lemon juice - 1/2 c
- grated lemon rind - 1 Tbsp
How to make lemon curd:
Combine all ingredients in top of a double boiler. Stir well.Bring water to a boil, reduce heat and cook 15 minutes or until mixture thickens, stirring constantly. Remove from heat. Let cool a little. Pour in jars. Cover and refrigerate. Use in tarts or on toast and biscuits.
