Lemon curd
Ingredients/Components
- sugar - 2 c
- butter or oleo - 4 oz
- eggs, beaten well - 3 item
- lemons 4 if small - 3 item
- grated rind from lemons - 1 item
How to make lemon curd:
Put sugar, eggs, lemon juice, butter or oleo and lemon rind in a heavy pan and stir together. Bring to a boil. Turn down heat. Slowly boil for 4 minutes, stirring constantly.
