Lemon curd

Ingredients/Components

• sugar - 2 c
• butter or oleo - 4 oz
• eggs, beaten well - 3 item
• lemons 4 if small - 3 item
• grated rind from lemons - 1 item

How to make lemon curd:

Put sugar, eggs, lemon juice, butter or oleo and lemon rind in a heavy pan and stir together. Bring to a boil. Turn down heat. Slowly boil for 4 minutes, stirring constantly. Pour into jars and store in refrigerator. Use on toast, etc.
