Ingredients/Components
- eggs - 2 item
- lemon juice - 1 Tbsp
- Crisco oil - 1/3 c
- Duncan Hines lemon supreme cake mix - 1 pkg
- chopped nuts or flaked coconut - 3/4 c
How to make lemon cookies:
Preheat oven to 375°. Grease baking sheets. Combine cake mix, 2 eggs, 1/3 cup oil and 1 tablespoon lemon juice in large bowl. Beat at low speed with electric mixer until well blended. Add 3/4 cup nuts or flaked coconut. Shape into 1-inch balls. Bake at 375° for 6 to 7 minutes. Cool 1 minute on baking sheet. Remove to cooling rack. Makes 3 dozen.Optional: Frost with 1 cup confectioners sugar and 1 tablespoon lemon juice or dust with confectioners sugar.
