Ingredients/Components
- butter, softened - 1/2 c
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla extract - 1 tsp
- sour cream - 1 c
- salt - 1/2 tsp
- baking powder
- baking soda - 1/2 tsp
- all-purpose flour - 2 c
- nuts, chopped - 1/2 c
- butter cold - 1/4 c
- pie filling lemon dessert mix - 1 item
How to make lemon coffee cake:
Topping:1/2 c. all-purpose flour1/2 c. sugar1/4 c. butter (cold)1 tsp. cinnamon1/2 c. nuts, chopped Prepare lemon pie filling according to recipe on label; cool. Combine next 6 ingredients in a bowl. Sift together flour, baking powder and salt. Stir into vanilla mixture. Spread half of the dough in a greased and floured 13 x 9-inch baking pan. Spread lemon filling over dough. Top with remaining dough, spreading with wet knife, if necessary, to smooth dough.Topping: With pastry blender, work remaining ingredients until mixture resembles crumbs. Sprinkle topping over dough layer. Bake at 350° for about 45 minutes or until topping is golden. Cool to room temperature or chill, if desired. Makes 1 cake (18 to 24 servings).
