  • salt - 1 tsp
  • flour - 2/3 c
  • oil - 2 Tbsp
  • large egg - 1 item
  • margarine - 2 Tbsp
  • lemon juice - 1/2 c
  • grated lemon rind - 3 tsp
  • pepper - 1/2 tsp
  • bread crumbs - 2/3 c
  • chicken breast halves, skinned - 8 item
  • fresh dill sprigs optional - 1 item
  • lemon slices optional - 1 item
  • chopped fresh dill or 1/4 tsp - 2 tsp

How to make lemon chicken:

Rinse chicken breasts and drain well. Arrange in nonmetal baking dish with meat side down in lemon juice. Cover and refrigerate 1 hour. Remove chicken. Pat dry with paper towels (save marinade). In a pie plate, beat egg with 1/4 cup marinade.

In a plastic bag, combine flour, bread crumbs, lemon rind, dill, salt and pepper. Dip each breast in egg mixture, then shake in crumb mixture.

In large, heavy skillet, heat half of butter and oil. Saute breasts over medium heat about 8 to 10 minutes. Turn chicken. Add remaining butter and oil. Saute until cooked through, 12 to 15 minutes longer.
