- salt - 1 tsp
- flour - 2 c
- powdered sugar - 3 Tbsp
- margarine - 1/4 c
- rich cream - 1/4 c
- cooked, mashed and then riced potatoes - 5 c
How to make lefse:
This recipe is a combination of an old one from my aunt and one from the Decorah, Iowa Nordic Fest, held the last weekend in July. It includes a Lutefisk eating contest.After ricing potatoes, add margarine and cream while still warm. Add sugar, flour and salt; mix and knead well. Using a small amount at a time, roll thin on a floured board, making last roll with lefse pin. Transfer to hot griddle with a thin spatula. Turn once. Spread with butter and sprinkle with sugar.
