How to make jamaican curried chicken:
Wash and dry chicken. Rub with lime juice and cut into small pieces. Lightly brown them, a few at a time, in oil. Set the browned chicken aside in a bowl. In the oil in which the chicken was browned, saute the onions and garlic, then add the curry powder; stir. Add the tomatoes, hot pepper slices, whole pepper, black pepper and a little salt. Pour in water and stir. Add the chicken pieces. Bring to a boil, then lower the heat. Cover cooking pot and simmer until chicken is tender. Taste for salt just before liquid is reduced to a gravy, about 1 hour.Recipe categories: Chicken, Main dish, Curries.
